If you leave the us for a little while you'll find out that in many parts of europe we call the crepe for pancakes and the lumps & bubbles are not the pancakes friend, so maybe it's time to open your minds to across the borders of the us and find out that european pancakes are freaky tasty, some like em with cinnamon & sugar other butter and suggar other like em with jam or whipped cream other like em plain:)

As I said to the Canadian, pancakes are thousands of years old and were made to clear ones larder of rich foodstuffs before lent. I bet those Romans had easy access to baking soda because as you said, history is wrong and pancakes are made a way that wasn't possible when they were actually invented.
