Thank you so much for sharing this lovely dish. I bundled thyme, oregano and parsely as my herbs (which complemented one another very well), and ended up cooking the roast a little longer due to size. The meat was so tender. Thanks again :)

@pogisiG You're an idiot, this dude went to culinary school, he at the very least has the fundamentals down. You probably have trouble with scrambled eggs.
Alot of people from Louisiana seem to knock this guy, but let me tell you, y'all don't know shit. I was born and raised in Gonzales, La. and while some of his techniques may be different, this dude knows how to cook. There ain't nothing wrong with how he does it. The only thing I'd do different than him on this roast is serve it with potatoes and over rice. This dude is good.
