wait if we know the knot, can't we go modern and use french clips and such?

The falconers knot is one of the very basic things any falconer/austringer should know. Tying it with one hand is imperative.Reason being, while holding the bird on the fist, the knot can be tied with the other hand thereby eliminating the possibility of the bird bating and escaping with the leash, swivel and leash and ultimately getting hung up and dying somewhere. You NEVER set a bird down on a perch and tie the knot with two hands. It's just too dangerous.Lose a bird and you'll know what I mean

Learn to tie a falconers knot for the love of god. Please. You should be able to tie and untie that leash with one hand.
-
it's amazing how these birds can be so gentle, precisely controlling their bite to make sure they don't draw blood from your fingers, and ironically they are such powerful predators that can lacerate almost any tissue with their razor sharp beak..

I know of several experienced falconers who never figured out how to tie/untie the falconer's knot with one hand.

Start at the beginning rookie. Learn the falconers knot.
Quite a few people in my area do not use it. My first red tail could unpick the knot even double tied.
I switched over to the 'fox knot' style which is VERY secure.
