A Successful Vegetarian School Lunch Program: One Man's Commitment

A presentation by Chef John Cadman.

Chef John Cadman will present a PowerPoint lecture explaining the complexities of creating attractive and appetizing school lunch meals within U.S. Department of Agriculture guidelines. He will also demonstrate the preparation of several approved school lunch selections.

John Cadman, the school food services manager at Haiku Elementary School on Maui, has been offering optional vegetarian meals to students and teachers for the past twelve years; and for no other reason than his conviction that vegetarian students should have a choice. A veteran food service worker for over 30 years in such places as the Four Seasons Wailea, The Grande Wailea, Hyatt Regency Kaanapali, The Maui Prince, and the Intercontinental, John is now primarily at Haiku Elementary.
