In Flames had nothing to do with founding death metal, that was before their time. As for melodic death metal, in flames were pioneers but I think it's wrong to say founders. Carcass were probably where it started, Amorphis were also very early (formed at about the same time as In Flames).
In Flames along with Dark Tranquillity and At The Gates stand out as groups who established the genre (hence Gothenburg Metal). However, groups like Edge of Sanity and Opeth also did a huge part of the job.
