Empanadas de carne

Ingredients: recipe
Mix for Empanadas
Ingredients:
1. Small Onion or Half ( Chopped)
1. Small Green Pepper ( Chopped)
1. Small Red Pepper ( Chopped)
1. Small Clove of Garlic (Minced)
2. Tablespoons of Spanish Green Olives With Pimientos & Capers
A hand full of cilantro chopped.
Salt & Pepper & Paprika to taste.
2. Packets of Sazon Goya Con Culantro y Achiote
Adobo( Goya) Season To season to Taste.. Note: Any other Brand of Adobo
May taste differently..
EMPANADAS: Are already seasoned very easy to use.
1 to 2 Packages of Goya Discos (1. 14oz.Pkg. Carries 10) Make sure they are defrosted and ready to use. ( Rolling pin or something to roll them out.) and half a cup of flour.
These are found in the frozen section of mostly all supermarkets
That carry Goya products.
Meat or Meats: You dont have to use all these meats you can use only 1. Its Your Choice.
But For Me If I were using 1 of the chop meats I would use a can of Cornbeef Made by libby Or whatever you can find. The reason for that is because it adds such a nice flavor
1 LB. of Beef chopped Meat
1 LB. of Turkey Chopped Meat
Note: The Pork I used was from Pork Tenderloin about a lb. Alternative: Would be sausage taken out of the casing..
Which I cooked the night before for 2 hrs because I kept basting it for flavor after cutting knife holes in it and keeping it covered
With aluminum foil cooking it with the fat side up so it comes out very tender..
Keep In mind you can put any kind of Meat inside as long as you cook it nicely chopped.
Cooking:
Heat up a large fry pan
Use about 2 Tbs. of Veg. Oil or whichever on hand.
Combine all meat browning it on med to low heat.
After its almost cooked add your entire chopped Ingredients
And Seasonings. I also used some of the drippings from the pork. Like a big spoon full.
After tasting it and getting it to taste the way I like it I shut it off.
Let cool down to room temp.

Stuffing Empanadas:
After they are defrosted
Keep a clean dry area to have room to work.
Sprinkle about a teaspoon of flour spreading it out
Set a disco empanada on the flour and roll out just about an inch to an 1 ½
Bigger then they come .In the center add your meat like making a 2 inch line from end to end but leave room to fold and making sure they are even ..pinched down with a fork to close them up .
Note: Lay them on a dry flat area lightly floured till there all made.
Fill another fry pan with veg. oil about half way .
And fry using a large spoon pushing the oil on top of them to cook the tops.
No need to turn them so they dont come apart. When golden and crunchy they are done.
Lay on paper towels let cool and enjoy!!
PLANTAIN BALLS WITH MEAT:
5 Green plantains that are ripe but not too soft . You can use a little salt in water.
Peel and cut into 3 inch pieces in a small pot boil them till cooked and still firm then mash

With a little salt make a small like meatball size ball poke hole in center fill with same meat filling and pushing it back together to form a closed ball.
Fry till golden brown. And Wow they are Pretty tasty compared to just reg. fried platanos.
You can modify these recipes ..if you want to make a smaller amount use half of everything
