Oh, and I like making this kind of gravy better in cast iron pans. You get some crust from the steak in the drippings.

How else do you make gravy except with drippings, flour and water? That's how I learned.

I surprised, considering her obsession with BUTTAH, that she didn't use a full-fat milk or cream to make the gravy. isn't that the best kind of gravy to use on Chicken Fried Steak anyhow?

I always thought gravy was made with water, period. Lol.

The only time we use milk for Gravy in the south is if we are making white gravy or we are making white sausage gravy...other then that we use water. Unless you are making a roast then you can use the stock from the roast drippings in place of half your water..

I can't believe all the negative comments about water gravy: "looks nasty, nothin says flavor like water, who uses water for gravy." I'll tell you who. Real, honest to goodness Southern cooks who were taught almost in diapers how to feed the hungry menfolk coming in from the fields. If you can't make a good gravy from water then you're not a real cook. I'll take being called a Cook over a Chef any day of the week.

Also meant to answer another negative comment (in my earlier post) about Paula having used, "WAY too much oil in the pan." I beg to differ. As any true Southern Cook knows, the reserve oil she poured off has already been flavored and can be used for other gravy dishes when no meat is being fried. Y'all have a great day and happy cooking.
