Just as they do ever spring, the citys chefs are preening about their love of seasonal vegetables, the return of which are heralded by the humble ramp. But just what the hell is a ramp, anyway? And would anyone want to eat one? I brought these questions to my friend Marco Canora, the chef of Insieme, Hearth, and Terroir, and one of the earliest and most faithful of Greenmarketgoers. Team Cutlets official videographer Sarah Lohman came along as Marco bought his vegetables and showed how he uses them at Insieme.
