This is an old method that very few exceptions in North America.
Both Wes Housler and Billy Metcalf have written on it. Some of what I said here
has not been published.
To make the old quick knives on the plains, just split a green stick half way as
long as your hand (always), and slip the chip in to be tied off with cord on
either side. You can pitch it if you like, but the blade goes in from the side and
not at the end. Push edge with front teeth to sharpen while butcher

@czarwill ...no flint in my area- I often use sandstone-sharpened bone with excellent results... but I am guessing u know this!

Using a flint chip works great for skinning.
Now when you're doing the initial cuts on the skin when you're preparing to remove the skin from the animal, like at 3:35, does it matter what kind of knife you're using, or just so long as you make sure the knife is sharp? I noticed you seem to be using a swiss army knife of somekind, but could you also use like a regular hunting knife, or would that make the process more difficult?

You can use any type of knife, the sharper the better. I like to use fairly small bladed knives, because it gives me more control, almost like an extension of my hand.
