The "THOUSANDS YEARS" written in 2 Peter 3:5-8 is to emphasize how amazingly long one of the 7 days can be considered in Genesis, not a day being a thousand years. The thousand years is there to help us understand how long one of the "days" in Genesis actually is, a literal 24 hours each day in the 7 days of creation results in a 6,000 year old universe. Our amazing God has created so many beauties in our universe far older than 6,000 yrs, proving over and over again His infinite imagination.

why do christians feel such a need to put a square book in a round hole?
It was written by primitive desert people who only thought their were 4 elements, earth, air, fire and water. Now we know about atoms and there are over 100 elements. they thought the earth didn't move and rested on pillars. It is not a science book, plain and simple. It is an ancient book of prose and poetry trying to find a reason for why things happened. We have grown, why can't that just be accepted?
