Think fresh, raw olives are an impossibility? In this interview I talk to Thierry Casasnovas, who has some land he runs along permaculture lines in the south of France. Thierry says that there is a long tradition of letting olives ripen naturally in the area, and that he has done it with excellent results. Listen in and then check out the details here: www.raw-food-health.net/Fresh-Olives.html

Perhaps it also depends on the kind of olives or on how and where they are grown

  • Definitely very interesting! thanks!

  • Love the ambient background noise ;)

  • I ate several times black olives few days/weeks (don't know) after they fall from the tree. They were good - not delicious. No doubt they are edible without any process.
