OMG. Greg,you had me at EGGPLANT! It looks so yummy, I can't wait to try it, especially in the summer when the eggplant is fresh. I had a wonderful cold lemon marinated eggplant dish at that old rustic lodge (Monte Rosa?) off the Taconic in Fishkill. Can't remember the exact name of that place. My step sister's 40th birthday was there and the food was unbelievable. This recipe sounds very close to that, especially if lemon was added. Thanks for sharing and see you around! Lisa
