We rotated the meat in the smoker unit nearly every hour to infuse smokey flavor into the pork while the remainder slow-cooked in La Caja China! This worked out terrific & allowed us to handle a much larger quantity than the smoker would have otherwise been able to handle!
I have a Big Daddy cold smoker that I use on my La Caja China. Look it up on the internet. It maybe just what you need.
