welll... maybe u let the mixing bowl touch the hot water.. bain marie.. is like not touching the water... maybe the over heating over cooked your batter before you baked it.. =o iono hope it helps. bain marie.. i just do same thing you do.. but i never let it touch the water..
ive seen a genoise cake made that was a lot denser and cut clean without all the crumbs....wish i had that recipe

what's the difference between a bain marie and putting a mixing bowl into a pot of hot water? That's what I did and the cake came out flat.

add vanilla and more flour, it makes it a lot softer. mine turned out flat, but soft and delicious.
