Made this for the first time yesterday, and I did some substituting. It turned out great. Best soup I have ever made. First substitution was bud light for the pale ale. I used a extra extra sharp Wisconsin cheddar I got from the deli. I upgraded the bacon to a thicker apple wood smoked, gave it tons of flavor. Only used one quart of chicken broth. Finally I drank 5 beers instead of the one that he drank while waiting for it to simmer.
