yummmm :) my mom does this too! she uses some roasted duck with pickled mustard greens, white pepper, and the 1000 year old eggs ^_^ by the way....those are realllyyyyy big pieces of 1000 year old eggs o.o

When I lived in Hawai'i my family would use left over turkey the day after thanksgiving. It's a great way to use leftover meats, veggies ect... Not to mention it's a great way to feed a large amount of people. You just make the congee and lay out all the ingredients.

Got a question does it matter what kind of rice I use? Because I tried it with long grain rice once and I don't know if i didn't put enough water or if congee can't be made with long grain rice but I ended up with dried white rice :/

@YukiTsuki101 You can use medium to long grain rice. The important part is the amount of water you use. You should use a lot of water to the amount of rice. If I were to give you a guess... about 1/2 cup rice to 6 cups of water. I like a medium grain rice for congee.

We called them 1000 year old eggs, or 100 year old eggs. Hated them. I went the Thai route. Beat eggs, with fish sauce, a little water to puff it up, and pepper and chopped onions. Fried it up and served as side. Along with pickled cabbage, and shredded pork and Chinese sausage.
