Took the challenge and it worked, like a charm!
By the way, forget about the 12 or 19 hours, just add lukewarm(!) water to your instant yeast and allow for a 3 hour rise period. I don't buy into the developing flavours argument either. Lightly dust with flour for the look. Try it!
ps. I love the way Tina synchronizes the chorus to us slicing the bread..
Looks awesome but did you follow the receipe from breadtopia? Did you use instant or fresh yeast? Was it cooked covered or open? Thanks for the post it sure looked yummy.

no, I followed my own method which is much faster and easier than the 'breadtopia' method. Follow the instructions next to the vid; combine solids, mix quickly (3 secs), add water (10 secs), rise 3-4 hrs, invert on flower dusted baking paper (towels tend to stick...) and fold onto itself like 3 times, and bake in Le Creuset pan (ie 'dutch oven') for 33 mins at 270C (500F?). Done! literally takes 5 mins of prepping plus one minute of washing up.

oh and yes I do bake it covered: secret is to increase the ambient humidity inside the pan so that you'll develop a nice crumb and crunchy crust. All ingredients are as plain as possible, so instant yeast, plain flour etc. Although in all fairness it does taste better with higher quality flour.
