ASPARAGUS AND FOUR CHEESE QUICHE

1 tablespoon butter
4 large eggs
1/2 cup ricotta
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup asparagus chopped
1 1/2 cups grated four cheese blend or cheese of your choice

Preheat oven to 350 degrees and spray a 9 inch pie plate with nonstick cooking spray. Melt the butter in a frying pan and saute' the asparagus until tender. Set aside to cool.

Beat eggs, ricotta, salt, and pepper in large bowl. Fold in cheese and cooled vegetables. Pour filling into prepared pan and bake until knife inserted near center comes out clean, about 40-45 minutes. Cool slightly before cutting.

  • that looks yummy!! I do have a question for you because- if you get nauseated but "know" you need to eat something... (I am pre-op right now-so this is just for reference) what do you get? I thought about just chicken broth or something like that? right now I use ginger ale or sprite... lol- sooo any suggestions?

  • I take the papaya enzyme chewable if I get nauseated. You can get it in the vitamin section at Walmart for about 4 bucks. It really does help.
