I think you got a good dough all you need is more patient ,thanks for the recipe you the only one that share it complete , I didn't know about the sesame oil. I heard that the baking soda mix with the water ?camon try again .

@ahsuknat I think this is the recipe I used (see below). Most recipes combine AP flour and cake flour in order to achieve proper gluten levels. I've also heard that the secret ingredient is Lye Water, which you can find in Chinese grocery stores. Honestly, this is the first and last time I ever tried to pull noodles. It's way too much work for me. Good luck, I hope your results are better than mine!
300g Cake flour
50g AP flour
200g Water
15g Sesame oil
6g Salt
3g Baking soda
