rushed? Hardly. Mendelssohn is said to have favoured very quick tempi. Whats more, the scherzo is a jocular and spirited form, especially in its Mendelssohnian incarnation (in 2, spiccato and staccato prevalent). However, I do agree that the octet is better played by an octet. It lends itself better to the light texture that Mendelssohn is famous for.
it should remain an octet, with more instruments it becomes a goulash.

Love the octet, but it should be kept that way. Sounds messy and rushed when played by a chamber orchestra.
