Most high performance diesel engines that run 60+ pounds of boost usually have a lower compression ratio to keep the head on the engine.. SO when the engine is starting you obviousley don't have the boost to make the engine run right, so yes you get unburnt diesel and white smoke. Diesel engines use the heat of the compression to ignite the fuel, so if you have a lower compression ratio you will have a hard time starting the engine.. Ever try to start a weak diesel on a cold day

He got there eventually what a great pull. Did the guy in the red overall give the engine a sniff of something, looks like he sprays easy start at about 4:10. Anyway thanks for posting the video

The white smoke is probably because of the water injection, but it's rare to see the water injection turned on at idle, usually it's turned on when pushed down the throtle.
Judging by how well it runs once its got some load on it I'd say these guys know exactly what they're doing.
A couple of things I'm curious about are: -
-what type of transmission do they use, clutch or torque converter?
Do they run a locked differential all the time or keep it open to let them steer with the brakes.

Transmission: Clutch housing, transmission case, rear end housing and axle housing must be O.E.M.
They steer the tractor with "wheel brakes" because the front tires is up in the air most of the time.
