Colorful grilled vegetables and pepper-Jack cheese make a lively and satisfying filling
for these quesadillas.
Serving size: 4 Servings
Ingredients:
8 6 inch Flour tortillas
1 Small zucchini, sliced lengthwise into 4 slices
1 Small yellow squash, sliced lengthwise into 4 slices
1 Red bell pepper seeded and cut into 8 pieces
1 Green bell pepper, seeded and cut into 8 pieces
1 Small red onion cut into slices
2 cloves garlic sliced
1 cup Shredded pepper-Jack cheese
1/4 cup Cilantro-chopped
1/4 cup Olive Oil
Kosher Salt & pepper to taste
Non-stick cooking spray
Directions:
Place all vegetables in a bowl and toss with olive oil, salt and pepper.
Spread on 4 inch rack and cook on power level high for 5 minutes.
Turn vegetables and cook additional 5 minutes. Remove.
Place two tortillas at a time on 4 inch rack.
Arrange the vegetables on the flour tortillas. Top with cheese and cilantro, and
two tortillas.
Lightly spray the tortillas tops with non-stick cooking spray.
Cook on power level high for 3 minutes or until the cheese is melted.
Repeat steps 4-7 for remaining tortillas.
Tips:
Use the 2 inch rack from the extender ring kit to place on top of the tortillas to
prevent food from moving in NuWave oven.
Serve with your favorite salsa.
