Nice video clip, although a little too long. It could be better if you can make the beginning part shorter, don't take too much time filming all the ingredients slowly, and spend more time on the cooking part.

Why do you need both white sugar and palm sugar for the recipe?

the white sugar adds a sharp sweetness note to the fragrant round sweetness of the palm sugar. remember that on of the Thai food basics is the creation of many layers of flavors all mixed together giving an harmonious flavor....keep me updated with your exploration....
