Pulling a shot on a La Pavoni Europiccola lever espresso machine. The same as la Pavoni professional. Using Caffe di Gabriel beans roasted in australia. And yes I realise I forgot to wipe off the shower screen before pulling the shot oops.

Some notes:
- I only ever pull 1 shot at a time, I dont believe the machine can handle a true double shot.
- I tamp hard
- I use a micrometrical adjustable commercial coffee grinder (Eureka Mondial 10kg) and spent a lot of time getting the exact right grind. even just slightly off and the shot won't work.
- I use the best beans (critical). when i used lavazza, i only got 1/3 the crema I do now, and didnt taste nearly as good.
- Make sure the machine is fully warmed up. ie: the group head and portafilter handle are all hot, not just the water.

If you're steaming milk with the pavoni steam wand and standard tip, its a bit difficult. gently stretch the milk while swirling until it reaches body temp and then just heat it while keeping the swirling going. It IS possible to get a decent amount of microfoam with the standard setup. and yes its normal for the wand to be a bit loose.

  • @Gweezian Well the staff at Seattle coffee gear(they have a channel here on Youtube with lots of reviews) have pros and cons on their website about most of their gear and one of the cons for the La Pavoni manual is " Users report this espresso machine can be a bit on the temperamental side, requiring a high level of maintenance and care"

  • @klarinetta I just purchased my professional and I love it. HOWEVER - 1) I have yet to get a shot that I can boast about despite consistently working on my technique and grind and type of beans (any suggestions welcome) 2) Haven't sold my Rancilio yet (love it 2) until I can master my Pavoni. I am not sure what you mean by maintenance but if you can pull a fantastic shot from the get go then you are in business. I have spitted a few shots from my mouth when realizing it was just too bitter.

  • Questa é schiuma non crema... sono 2 cose abbastanza diverse. Il risultato é troppo poco denso per avere una buona crema. Segui gli ottimi consigli che ti hanno dato gli altri utenti.

  • @TheWupperdo take a look at the video that Seattle Coffee Gear has about this machine. The final shot they made is perfect.

  • How is the maintenance and durability of this machine ? I've heard they make one of the best shots around but that they tend to need a lot of maintenance to function well.
