Mr Diebler, it turned out "wondermous". We had about 10 folks in the house,,, half didn't care for it and half loved it. Being a Georgia boy, I loved it and have a couple of quarts leftover just for me. Only thing I'm going to change next time is back off the flour by about a half cup in the rou. It was a little bit "grainy" but I might not have cooked it long enough like you said. Heated up some shrimp boudin and made lard biscuits for breakfast this morning. Thanks you Sir.

I couldn't find Filet up here in Wisconsin but used Old Bay seasoning. The veggies are on the stove now. About to make the rou per you instructions. House is smelling good already.

@Goobr54 rou is toughest part, stir,stir,stir, so doesnt burn. smells good from georgia. good luck. makes a good duck gumbo also

@stephendeibler Got the gator meat in yesterday, still cold so it's good. Was talking with a buddy at work last night. Is there a reason, or do I need to add "filet" seasoning?

@Goobr54 like the song "filet gumbo", it is an optional add-on, just like you may salt and pepper to taste, not required. Thanks
