While I have to admit that I enjoy Metro in the latest Windows 8 Consumer Preview, I very much agree with your comment.

I'd like at the very least there to be some kind of option in say the "Turn Windows Features on or off" section of Control Panel to use or disable the Metro UI and/or have some kind of traditional start menu back.

This is what Metro on Windows 8 should be.... Less invasive, and while having a slight learning curve, still pretty intuitive.
