So....its Friday 27th February, Nicko's birthday and as promised Nicko cooks up his signature dish!

Ingredients:

1kg chuck steak
40ml (2 tbs) oil
250g onions chopped roughly
250g button mushrooms
3 parsnips and oil for shallow fry
2 tsp Worcestershire sauce
2 tsp tomato paste
500ml (2 cups) beer (good quality)
300ml (1 1/4 cups) beef stock
1 sprig thyme
2 bay leaf
2 tbs cornflour
375g block puff pastry
1 egg, beaten, to brush

or to make your own pastry

1 1/4 cup flour
1/2 tsp salt
1/2 c butter
2 tsp ice cold water

Tomato Salsa:

3 ripe tomatoes, de-pulped and chopped finely
1 onion chopped finely
1/4 finely chopped parsley
1 tbls Balsamic vinegar

  • @Brighteyes1ful hi, im not nicko and i dont know what is an alternative to mushrooms, but my brother hates canned corn so i put mushroom in my pasta salad (for instance) just for a bit of texture similarity,and for the meaty rich taste i would say chick-peas (garbanzo beans) but you cant really cook those in the same way... in my culture, we call mushrooms: the poor man's meat! mb meat is a good substitue :)

  • Only Comment would be that if you really want to help people improve their cooking perhaps you should work on your technique rather than the fancy garnishes.

    Pastry technique was well done and demonstrated.

    The pot pie filling would have tasted very flat and oversalted as you did not use traditional techniques for building the flavor of the base. I would recommend that the onions and mushrooms be browned to carmelize and draw out the flavors, then the beef (yours were sweated not browned.)
