@Stewvanavich1 also wanted to add, the steaks do look good. I just re-read my post and it sounded a bit negative. Big Poppa's video's are very professional and informative. I just try and stay away from using thermometers in smaller pieces of meat. I do use a thermometer when smoking pork butts, turkeys, brisket.

@daniel1c yes, poking the meat with the probe does cause the juices to run out. his steaks would have been better if he didn't use the thermometer.
