Ingredients:
1 lb sweet potato (about 1 3/4 C puree)
1 C flour
1 C rice flour
1/4 C brown sugar
1 egg
1/4 t vanilla

Boil the sweet potato until cooked through, about 45 minutes. Drain and peel the potato, then mash it to make a puree. In a bowl, combine the puree, flour, rice flour, sugar, beaten egg and vanilla. Adjust sugar and vanilla to taste. The dough should be firm. If soggy, add more rice flour, and if too dry, add a little butter or milk. Begin heating oil in a deep fryer until it just begins to smoke, then turn off the heat. Flour your hands well. Form the dough into balls and flatten them to form patties. Fry the patties quickly until light golden brown on both sides. Remove and let drain on paper towels before eating warm. The inside of the mofo should still be slightly moist and not bready.

Ingredients:
450g patate douce
150g farine de riz
125g farine de ble
50g sucre roux
1 oeuf
1/4 c.a.c. vanille

Faites cuire la patate douce jusqu'a ce qu'elle soit bien tendre, environs 45 minutes. Egouttez-la et enlevez la peau, puis ecrasez-la pour en faire une puree. Dans un bol, melangez la puree, les deux farines, le sucre, l'oeuf et la vanille. La pate ne doit pas etre molle - rajoutez de la farine de riz si elle est trop liquide. Chauffez bien l'huile dans une friteuse (tres chaud pour que les mofo ne prennent pas trop d'huile). Mettez de la farine sur les mains. Faites des boules de pate, puis aplatez-les pour en faire des galettes. Faites-les frire tres vite dans la friteuse. Enlevez-les quand ils sont dores de chaque cote. Les mofo seront encore un peu mou a l'interieur. Degustez tiede.
