  • Admittedly the chocolate does seize up a bit but once it's all incorporated it's not an issue. I've made this many times and it's really rich and really tasty. I do strain the tofu after I process it to draw out some of the liquid (usually a quarter cup or so) and it gives the mousse more body and firmness.

    Tofu is flavorless without treating it properly, so it's perfect for this application.
