I noticed the first sword has one peg hole. The second one has 2 peg holes for the mekugi. Why is that? Is that a modern trend in katana sword making? Isn't it they only have one mekugi or peg in the traditional way of making it. Please enlighten me.

I'm sorry to correct in this but Japanese swords are traditionally equipped with one bamboo pin (mekugi). Older swords may have more holes in the tang but these are nog used when mounted, it is often an indication that the tang has been shortened or the sword has been remounted.
