the poor ice pattern that it's showing is a result of what manitowoc calls " serpentine separation" if you uninstall the plate , and look on the backside, you will find the tubing is separating from the plate itself. there is nothing you can do about it, and the plate is junk. if it were a charge issue, you would have full rows not making ice, one row on top of another. Yours shows uneven ice pattern at angles, and different areas of the plate.

Ice bridge thickness incorrect or the charge is incorrect. My first two guesses.
