I remember them being really cool and expensive, but don't get why it's monochrome. Didn't even it's predecessor the Apple ][ have color? And a bunch of others from the 70's were color as well.

Because the bus was simply too slow to push all that data around with the way it's designed and it would have required much more video ram and would have required a color Trinitron monitor which would have raised the price by hundreds of dollars. The original mac was already pretty slow and they didn't want it any slower or any more expensive.
I can't believe they got people to yell and scream like that about a computer.
