    Love all your videos, so informative and authentic (use to work in a real thai restaurant) I did your pad thai recipe and it was delish! One thing is that the noodles was saucy like your video but then 5 mins after plating it came dry again (not saucy) what do you think it could be ? noodles soaked it up ? thanks Pai!

    You don't want this dish to have any sauce pooling at the bottom actually, it should be completely dry at the end. I think I mentioned it in the video that you do want to cook it until all the liquid has been absorbed. So I think you're doing it right!
