  • I've done a course with Tim in London, he's a great teacher, and really knows his stuff.

    The reason he's so slow on this video is because he is teaching a class.

    When he's working behind a commercial bar, he's a lot quicker!

  • is that caviar that he manages with metal spoon and strainer? ... if it is than it's fail at molecular mixology cos it's eaten with bone , plastic or wood spoon.... with one very good reason... xD

  • @lyurdatap I think he is just showing the customers how to make the drink and the apple juice spheres, in the video he talks about how the alganate spheres keep for 3-4 days in the cooler and how he makes large batches.
