@lyurdatap I think he is just showing the customers how to make the drink and the apple juice spheres, in the video he talks about how the alganate spheres keep for 3-4 days in the cooler and how he makes large batches.
I've done a course with Tim in London, he's a great teacher, and really knows his stuff.
The reason he's so slow on this video is because he is teaching a class.
When he's working behind a commercial bar, he's a lot quicker!
