Sunday Kitchen #30 Toshikoshi Soba

In Japan people eat soba on December 31st. Normally, soba is called soba. But if you eat soba on Dec 31st, it's called "Toshikoshi Soba". It's just normal soba, with a different name. So if you started eating "Toshikoshi soba" just before midnight... the name of your noodles would change halfway through the bowl. Cool.

  • Do you "shock" your soba in cold water before eating? I've been doing that because I figured that's what you're meant to do, but I greatly prefer warm noodles! Also, is that soy sauce with the green onions?
