Now 8/9 weeks old thjs little stoat is going outside during the daytime as the first stage of her release programme. At the moment she is in a kitten pen in our back garden.
After a few days she will be left outside day and night and then will be taken to her release site and kept in the pen for another couple of weeks until she gets her bearings, then the pen will be opened and she will be free to come and go, but food will be left for her while she learns to hunt and take her own food.
Do these turn white in the winter? I know there are some species that do, but don't know which ones those are.

Yes, you're right - it is stoats which turn white in winter (where winters are long and hard). Unfortunately, when they turn white they are known as ermine, which was highly prized for fur coats when fur coats were fashionable!
