Great recipe. In Belgium we also add some green celery to the onion and garlic - try it, it works :)
Oh, and we just put the vegetables and garlic in the pot and on top the mussels. No need to frie the garlic/onion first, it fries when you put it on the fire. After a few minutes you shake it, then it is also like your recipe, but it's easier :)
