  • Hello Chef Kapoor,

    I own many Indian cook books. None simplify recipes as you do. You've managed to keep flavor, dispel complications and encouraged me make more of this awesome food.

    Thank you for dispelling the myth that Indian food all over the world has to be super spicy. I know this is not the case, none of my family members, extended family members in the last three generations have cooked that way. (It's the Southern cuisines of India that rely just on lots of oil and chillies.)
