  • hi, i've seen on your blog, that you use a machine to mix the ingredients, how is it called ?

  • @azt3c I used a ktech or a blendtec, but I haven't used a mixer for over two years, preferring to use my hands and a dough folding trough.

  • Teresa, are you using wholemeal flour? 

  • @connaultnicolas It's been a while since I made this video, but I believe it was a white dough with some rye and whole wheat added.

  • Thanks for sharing this Teresa! I was looking for info on shaping a boule. This is the clearest online video I've found. I am new to sourdough, and so seeing the texture of your dough, exactly how much flour to use to dust, using the scraper, not cutting to deeply helped me very much. The pace was just right. I could see clearly what you were doing. Thanks again!

    What makes the bread fluff (Airy).

  • Also, when scoring, try holding the blade at a slight angle, so you can get a nice lip to the slice when it bakes, and springs in the oven.

  • It's not pronounced Bouly.  It's just Boule (Bool). And when you bake it you want the seam side down, so it doesn't explode in the oven.
