I wonder what the cross-contamination issues are. Obviously hot eggs heat up the water, allowing bacteria. If its just one or two eggs, no big deal, but if you put a lot of hot eggs into the water, eventually the temperature would rise, creating a nice home and a buffet for bacteria.

if you mean the water we hold the eggs in, yes it should be ice cold. Since I only did a few no problems, but yes, good point. If your doing lots and are going to do them way ahead of time then use ice in the water and refridgerate until reheating.
