The reason so many american chefs seem arogant or egotistical is because in america you got to sell yourself. You're not gonna get americans from the east coast (and vice versa)to travel across the country on word of mouth alone. These chefs become famous by acting crazy and wild to get TV shows to further market themselves to the entire country and not just one region.

Flay didn't learn any fucking thing about being respectful to food especially the position where lots of livings e.g. lobsters that sacrificed their lives for us. He will obviously be killed up there, by his own stupidity.

I thought Flay's menu was very risky: A lot spices and a good amount of heavy foods. A strongly American presentation on a collision course with the mostly Japanese judges. But I can see by using a lot of fruit and honey in the dishes (dressings, sauces, marinades), Flay was able to use the fruits not only as sweeteners as regulators to the spices he used in his menu so that nothing was too spicy or hot. And it definitely paid-off. The judges loved it! A Brilliant strategy by Flay!

I think the Japanese tasters actually didn't like his dishes and were just sort of humoring bobby. "Thanks for the slop let's get to Morimoto"...j/k his dishes looked fantastic I just think mustard + horseradish would pretty much make a Japanese person run for the hills.
