  • How did you get your WSM up to 350? I do the Minion Method, gets to 250 max. 

  • @BeeRich33 I dont use the minion method to get temps up to 350. I pour in a chimney full of unlit charcoal and then on top of that a chimney full of lit charcoal. I then keep the bottom vents wide open til it gets up there then I close them a little to see what works. It all depends on outside temps and winds too...and how well your WSM is insulated.

  • @fluffypope Actually, there are some electric knives out there that make a bunch of cutting a real snap. I thought the same, and I have several French carbon steel blades, and other high end stainless ones. I love my knives, but a Rappala electric is quite the tool.

  • Hmm, Cherrywood. I face breast side down so all the juice from back bone runs into breast meat and flip bird over 3/4 way into cook, and I can never Bbq either without the old-lady having something to say. That’s why I wear my Ginny-tee shirt [wife beater] when bbqing in sending a clear message. I would’ve stabbed my old lady before taking out my frustration out on the bird when carving. You should’ve tried a swift back-hand first and if matter persists, stab her though not in front of the kids.

  • This looks really good I'm thinking of doing Turkey and getting a WSM for next Christmas! Last Christmas I got up at 6am (after a party with friends-ouch!), went outside and lit my Landsmann to do Turkey. End result was good but it didn't look as good as yours, mind you it was minus 15C when I did that! Greetings form the UK.

  • @atcnick Actually, opening the vents does the trick for me. I did a hot turkey for Thanksgiving.
