Large 40" screens are almost usually *va type, which have terrible ghosting and if compared to a good monitor, are eye straining because the object is out-of-focus during movement.
More importantly, they have SDE, screen door effect. This is extremely distracting. Also, if you use it truly as a monitor, text is not sharp.
I understand your dislike of eyefinity, but you assume everyone is distracted by it. It's not just a hype, many people enjoy it. I'm sorry you can't.

Would it not make more sense to make all of the monitors the same? Just for slight things like gamma and stuff?

@I3I2UC3 It would, if I wanted to spend an extra $200.
These are CPVA and EIPS monitors.
They match each other more closely than even the Same model TN monitors do, which is what ever one uses.
So, despite being different, they are still more accurate.

I'm thinking about doing an eyefinity setup in my next build. Do you think it's worth it?

Absolutely not, not for games. Triple monitors is great for general use.
However, for games:
Many do not support eyefinity.
Some games do not support Crossfire, yet if you run eyefinity without crossfire, be prepared for terrible FPS.
The control center you use to enable eyefinity is buggy.
Switching from eyefinity to desktop mode (and you will be, constantly.. unless you only game) is annoying.

@t1ivideos just go on widescreen gaming forums, chances are there will be fixes for games that don't support it.
