Derren indeed says he uses "magic, sleight of hand, psychology, misdirection, and showmanship". The word fake does not apply to four of these elements for reasons that you've already pointed out, but it does apply to misused/misunderstood pop-psychology.
And where magic (involving misdirection and sleight of hand) is concerned, one may call it fake whenever evidence shows that camera editing or actors were used.
To conclude: at least 1/5 fake.
