So, the fruit for Day 20 is...the Cantaloupe!

Funny thing is, what most of us think of as a "cantaloupe" is actually a Muskmelon! True cantaloupes are grown mostly in France and are rarely seen in the United States.

That being said, what I'm referring to as a cantaloupe (which is really a muskmelon), is loaded with some amazing nutrients and has some fantastic health benefits!

-One cup of chopped cantaloupe contains only 60 calories! Here's yet another high nutrient dense, low calorie dense food.

-Cantaloupes are very very high in:
Potassium
Vitamin A
Vitamin C
Beta-carotene
-Cantaloupe is also a great source of:
Fiber
Vitamins B3 and B6
Folate

-Just one serving of cantaloupe (1/4 of a medium-sized melon) gives you more than 400% of your daily Vitamin A and also gives you almost 100% of your daily Vitamin C!

-Because of its high potassium content, Cantaloupe has been shown to help lower blood pressure and also help lower LDL cholesterol levels.

-Cantaloupe helps protect against certain cancers and heart disease because of their high antioxidant levels.

-Cantaloupe contains a special compound that has been shown to relieve or help anxiety and help you sleep better.




Are you ready for today's LOW FAT, RAW VEGAN RECIPE FEATURING THE CANTALOUPE?
Here it is:

CANTALOUPE AND CUCUMBER SALAD WITH PEACH-MINT PUREE

Doesn't this salad just sound like summer? It's cooling, refreshing, cheery, and bursting with warm sunshine!
This entire salad contains under 300 calories.

Ingredients

1 small to medium cantaloupe, seeded and chopped
1 cucumber, chopped
6-8 fresh mint leaves
1 peach

Toss all of the above into your favorite salad-type bowl. Put the peach and mint into your blender/food processor and blend until it's smooth. Drizzle the peach-mint puree over the ingredients in the bowl and toss gently. And there you have it, another easy yet positively delicious meal overflowing with life-giving and life-enhancing foods!

Eat oodles of Cantaloupe!
Eat tons and tons of fruit!
