【麻辣皮蛋】
【材料】:皮蛋3個、青椒1個、薑1塊、辣椒3支、辣豆瓣1大匙、酒1大匙、醬油1大匙、糖1/2匙、胡椒粉少許、麻油少許
【做法】:
1、皮蛋去殼,切成四小塊後,用太白粉薄薄沾裹一層。
2、青椒、薑、辣椒切片備用。
3、皮蛋和青椒一起過油。
4、鍋中留一大匙油,加入蒜片和辣椒片爆香後;
5、加入豆瓣醬炒出油亮色,加入醬油、米酒、雞粉,打一點水;
6、放入皮蛋和青椒,拌炒均勻,即可起鍋。

【苦瓜鹹蛋】
【材料】:白苦瓜1條、鹹蛋1個、蒜苗1支、辣椒1支、雞粉1/2小匙、胡椒粉1/2小匙、糖1/2匙
【做法】:
1、白苦瓜去籽,用刨刀刨成薄片,泡冰水冰鎮。
2、取一塑膠袋,放入鹹蛋,捏成泥狀後取出備用。
3、取出苦瓜瀝乾水分,用油炸至金黃色,撈出瀝油。
4、鍋中留少許油,加入鹹蛋末炒香,將苦瓜、辣椒絲、蒜苗絲倒入一起拌炒;
5、加入雞粉、胡椒粉調味,即可盛盤。
