how many is "several minutes" before your turn ? also how long marinade?

About 2 minutes would be good at first. Depending on the temperature of the stove & thickness of the pan it is difficult to point out a definite time, but it does not have to be very accurate because you are going to turn it over several times before it is complete. Marinade can be done for about 10 minutes. But, if you are in hurry, after marinating, the time it takes for setting the pan, heating oil etc. is good enough for adding the egg plant right away.
