In my headcanon Sam is so tired of being the underdog. He is tired of never having control in his life. When he has sex he tries let out all of his frustration and hurt, and it comes out rough sex.
Dean has been through so much that Sam doesn't even know about (let's face it, Jon was a dick) and is tired of feeling bossed around and out of control. When he makes a human connection he treasures it. He never wants the woman to feel the way he's felt, he wants her to feel safe.
