thanks sweet ladies! we arrived at the water by ourself..we boil a lot of milk almost daily for our shop and we noticed that using the wet pans would make cleaning much easier.. but we discover the greased brink that I'm sure will work very well.. I try tomorrow.. grazie ciao v

Thanks for the tip. We tried making paneer and kept burning our milk. So the water worked well and we also heated 4 pints of milk in the microwave for 5 mins before boiling. I think that made a difference as well. The bottom of the pan was only a little brown by the time we strained our cheese. Give it a try. Thanks!

Well...you pour in the milk before switching on the stove. The water prevents the milk fat from sticking to the pan at the beginning.

Here's one of my tips if anyone is interested: another way to prevent milk from boiling over is to place a utensil like a spoon or something large enough in the pan of milk which will provide a path for the steam to escape instead of it building up under the milk solids which causes it to rise up and boil over the pan.
